Turkey Mac Casserole Recipe



This Turkey Mac Casserole recipe is a comfort food dish that pleases all. I usually serve it with sauteed spinach and bread for a well rounded meal, but it's perfect by itself.

We have different variations for this recipe too! You can add cooked broccoli or green peas to it to give it some added nutrition. Or you can top it with a spoonful or two of Stove Top Stuffing. It's good with or without the added goodies.

Ingredients

2 tablespoons butter

1/4 cup all-purpose flour

2 cups chicken broth-divided into 1 1/2 cups and 1/2 cup

2 cups half & half cream

1 pound Velveeta, cubed

3 cups cooked, cubed turkey

16 oz elbow macaroni (or other pasta noodles)

1/2 teaspoon salt

1 teaspoon pepper

1/2 teaspoon seasoned salt (optional)

1 cup cheddar cheese

Instructions

Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 baking pan.

Melt butter in a large skillet. Stir in flour, being sure to break up any clumps of flour. Add broth and half & half slowly, stirring until mixture is smooth. Constantly stir and cook until mixture is thickened and bubbling. Remove from heat, add VELVEETA ONLY, and stir until cheese is melted and mixture is smooth. Stir in macaroni, turkey, salt, pepper and seasoned salt. Add additional broth if necessary. Pour into baking dish, sprinkle with cheddar cheese. Bake uncovered for 35-40 minutes or until bubbly.
