Jason's Turkey Sausage And Peppers



This turkey sausage and peppers recipe is one of my husbands favorites. (I think he may have been Italian in one of his past lives.) He completes this meal with some whole wheat pasta and King's Whole Wheat Savory Butter Rolls. (There we go sneaking in healthy stuff again.)

Ingredients

2lb. uncooked hot or mild turkey italian sausage links, cut into 2-inch pieces

1 tbsp olive oil

3 small green, red and/or yellow bell peppers,cut into strips

2 cloves garlic,minced

1 medium onion,sliced

1/2 cup dry red wine or water

1 can (28oz.)crushed tomatoes with Italian herbs

1 tbsp oregano Leaves

1 tsp parsley flakes

1 bay leaf

Instructions

Preheat oven 350 degrees.

Heat olive oil into large skillet.

Cook sausage pieces in hot oil until brown.

Using slotted spoon, transfer sausage to 3-quart rectangular baking dish, reserving drippings in skillet.

Cook bell peppers,garlic and onion in reserved drippings until tender.

Add wine, undrained crushed tomatoes,oregano,parsley flakes and bay leaf.

Bring to a boil;reduce heat. Simmer,uncovered,for 10 minutes.

Pour tomato mixture over sausage pieces in baking dish.

Cover and bake for 30 minutes.Remove and discard bay leaf before serving.
