Turkey Sausage Coins Are The Perfect Bitesized Snack!



My kids love these Turkey Sausage Coins. I made them for a team meeting at the school and the team went through them! They're a little spicy, so if spicy isn't your thing you can omit the cayenne pepper.

Ingredients

1 tablespoon olive oil/vegetable oil

1/4 cup onion, minced

3 teaspoons minced garlic

1 lb turkey kielbasa/Polish sausage, cut into 1/2 inch slices

1 teaspoon paprika

1/2 teaspoon coriander

1/2 teaspoon cayenne pepper/ground red pepper

1 8oz can tomato sauce

1/4 cup dry red cooking wine

Instructions

Heat oil in large skillet over medium heat.

Add onion, cook for 4-5 minutes or until translucent, stirring occasionally

Add garlic. Stir, cook for 30-60 seconds

Add sausage. Cook for 3-4 minutes or until lightly browned on both sides

Stir in remaining ingredients. Cook for about 5 minutes or until liquid is reduced, stirring occasionally.

Serve with cocktail picks or toothpicks.
